SUGAR-FREE STRAWBERRY ICE CREAM
Strawberry Ice Cream! This is our homemade sugar-free version of the ice cream which can be made with regular ingredients on a 1:1 substitution. The basic formula is so simple and pantry friendly. It’s so easy to make and definitely can be prepared ahead.
SUGAR-FREE STRAWBERRY ICE CREAM
YIELD: 1 1/2 Quarts or about 6 Cups
Ingredients:
1 1/2 Cups Puréed Fresh Strawberries
3/4 Cup Whole Milk or Lactose-Free Whole Milk
2/3 Cup Xylitol or any Sugar-Substitute (like Splenda) or regular granulated sugar
Pinch of Salt
1 1/2 Cups of Heavy Cream
1 1/2 teaspoon Vanilla Extract
Instructions:
- Prepare your ice cream maker and Ingredients: Freeze the bowl attachment of your ice cream maker overnight or if have an ice cream maker with its own compressor you are good to go. Measure out and refrigerate your ingredients except the vanilla, sugar and salt. Make sure that the ingredients are well-chilled for a least 2 hours.
- In a bowl mix your sugar, salt, vanilla extract and milk and stir until the sugar is totally dissolved. Stir in your heavy cream until mixed. Lastly, add your strawberry puree. Mix Well.
- Pour the mixture into the bowl of the ice cream maker and proceed following the manufacturer’s instruction. It usually takes about 45-50 minutes to churn the ice cream. Transfer the ice cream in an air-tight container and freeze for at least 2-3 hours before serving.
- Serve with fresh berries, a drizzle of chocolate syrup or scoop to make strawberry ice cream milkshakes!
