BARTLEBY’S CYNAR NEGRONI

How is it we lived in Italy for two years and are just now discovering Cynar (pronounced Chee-nar), the Italian herbal aperitif  made with artichokes?  We promise you will never have a Negroni any other way, once you try this recipe.  It’s crisp and comforting, boozy without being cloying (bye-bye Campari!). The first sip is restorative; by the third you’re downright mellow.   The perfect autumn elixir.

BARTLEBY’S CYNAR NEGRONI1
– jigger dry gin (we like Hendricks for this recipe)
– 1 jigger dry vermouth (not sweet)
– I jigger Cynar 

Stir with a long spoon to blend, the pour over three large ice cubes.  Garnish with rosemary to bring out the herbal notes.
